Carrage bolts for skids

I had the problem of my skids constantly sliding back up. When I went to tighten the carrage bolts they stripped after less than half a turn. Since I have replaced the two that broke with 3/8 inch hex bolts(will put carrage in place, just didnt have any on hand). These are the type from homde depot, stainless steel or zinc coated. I am able to tighten these down much more and prevent all slippage. My question is will this metal promote corrosion? Why does arians use those soft bolts?
